Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup old-fashioned oats
  • 1/2 cup packed light brown sugar

  • 1/2 cup apricot preserves
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup honey
  • 1 large egg white
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. In a medium bowl, combine the melted butter, oats, brown sugar, and salt. Press into the bottom of the prepared baking dish.
  3. Bake for 15 minutes, or until golden brown.
  4. In a small bowl, combine the apricot preserves and coconut flakes.
  5. Spread the apricot mixture over the baked oat mixture.
  6. In a medium bowl, whisk together the egg white and honey until stiff peaks form.
  7. Spread the egg white mixture over the apricot mixture.
  8. Bake for an additional 15 minutes, or until the egg white mixture is golden brown.
  9. Let cool completely before cutting into squares.
