These Honey Mustard Glazed Carrots are a great way to add some sweetness and flavor to your next meal. They're easy to make and can be roasted in the oven or on the grill. The honey mustard glaze is made with honey, Dijon mustard, apple cider vinegar, and thyme, and it gives the carrots a delicious glaze that's slightly sweet and tangy.
I first had these carrots at a potluck a few years ago, and I was instantly hooked. They were so good that I asked the person who made them for the recipe, and I've been making them ever since. I've tried a few different variations over the years, but this is the recipe that I always come back to. It's simple, but it always turns out perfectly.
Prep time: 10 | Cook time: 25 | Serves: 4
Ingredients
1 pound carrots, peeled and cut into 1-inch pieces
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup honey
1/4 cup Dijon mustard
1 tablespoon apple cider vinegar
1/2 teaspoon dried thyme
Instructions
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, or until tender.
In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, and thyme.
Remove carrots from the oven and toss with the honey mustard glaze.
Return carrots to the oven and roast for an additional 5 minutes, or until the glaze is set.
Why It Works
The honey mustard glaze is the perfect balance of sweet and tangy.
The carrots are roasted until they're tender and slightly caramelized.
The thyme adds a subtle herb flavor to the carrots.
