Savory Spinach, Bacon, and Feta Stuffed Bell Peppers

Ingredients
6 bell peppers, any color
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bacon
10 ounces fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1 egg, beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Cut the tops off the bell peppers and remove the seeds and ribs.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened.
Add the bacon and cook until crispy. Drain the bacon on paper towels.
Add the spinach to the skillet and cook until wilted.
Stir in the feta cheese, Parmesan cheese, egg, salt, and pepper.
Stuff the bell peppers with the spinach mixture.
Place the bell peppers in a baking dish and bake for 15-20 minutes, or until the bell peppers are tender.
Serve immediately.
