Savory Bacon and Sweet Corn Sauté
This is a simple yet flavorful side dish that pairs the smoky richness of bacon with the sweet crunch of corn. It's the perfect way to use up leftover bacon, and it's also a great way to add some vegetables to your meal.
This recipe was inspired by a dish I had at a restaurant in the Midwest. I was so impressed by the combination of flavors that I decided to try to recreate it at home. After a few tries, I finally perfected the recipe, and now it's one of my favorite side dishes to make.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped bacon
  • 1/2 cup chopped onion
  • 1 cup fresh corn kernels
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup grated Parmesan cheese
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the bacon and cook until crispy, about 5 minutes.
  3. Add the onion and cook until softened, about 3 minutes.
  4. Add the corn, salt, and pepper and cook until the corn is tender, about 5 minutes.
  5. Stir in the parsley and Parmesan cheese and serve immediately.
