Ingredients

  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp creamy peanut butter
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/2 cup frozen tropical fruit blend (such as mango, pineapple, and papaya)
  • Fresh tropical fruit (such as mango, pineapple, and papaya), for topping
Instructions
  1. In a jar or small bowl, combine the almond milk, coconut milk, chia seeds, oats, shredded coconut, peanut butter, vanilla extract, and cinnamon.
  2. Cover and refrigerate overnight, or for at least 4 hours.
