Ingredients
  • 1 pound pasta
  • 1 tablespoon olive oil

  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Cook pasta according to package directions.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic and cook until softened.
  4. Add sun-dried tomatoes and spinach and cook until spinach is wilted.
  5. Add vegetable broth and heavy cream and bring to a boil.
