In the summer, when the vegetables are at their peak of freshness, I love to make this one-pot pasta dish. It's a quick and easy way to get a delicious and healthy meal on the table. The first time I made this dish, I was looking for a way to use up some leftover vegetables that I had in my fridge. I threw them all into a pot with some pasta, and voilĂ , this dish was born! I've been making it ever since, and it's always a hit with my family and friends. I hope you enjoy it as much as we do!
