The Loaded Sweet Potato and Egg Breakfast Bowl was born out of a desire to create a breakfast that was both hearty and flavorful. I wanted something that would stick with me all morning long, but that wouldn't weigh me down. I also wanted something that was easy to make, and that could be customized to my liking. After a bit of experimentation, I came up with this recipe. It's quickly become one of my favorite breakfasts, and I'm sure you'll love it too.
Prep time: 10 | Cook time: 25 | Serves: 4
Ingredients
1 large sweet potato, peeled and cubed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
1/4 cup salsa
1/4 cup shredded cheese (cheddar, Monterey Jack, or Mozzarella)
1 tablespoon chopped fresh cilantro
1 tablespoon chopped red onion
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss sweet potato cubes with olive oil, salt, and pepper.
Spread sweet potatoes in a single layer on a baking sheet.
Roast sweet potatoes in preheated oven for 20-25 minutes, or until tender.
While sweet potatoes are roasting, heat a small skillet over medium heat.
Crack eggs into skillet and cook to desired doneness.
Assemble breakfast bowls by dividing sweet potatoes, eggs, salsa, cheese, cilantro, and red onion among four bowls.
Season with additional salt and pepper to taste.
Why It Works
- The sweet potatoes are roasted until they're tender and caramelized, which gives them a delicious flavor and texture.
- The eggs are cooked to your liking, so you can have them runny, over easy, or hard-boiled.
- The salsa adds a bit of heat and spice, but you can adjust the amount to your liking.
- The cheese melts into a gooey mess, which adds a bit of richness and flavor.
- The toppings are endless, so you can customize your breakfast bowl to your liking.
