Beet and Goat Cheese Omelette

Ingredients
  • 2 large eggs

  • 1/4 cup baby spinach
Instructions
  1. In a medium bowl, whisk together the eggs, goat cheese, beets, thyme, salt, and pepper.
  2. Heat the olive oil in a nonstick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook for 2-3 minutes, or until the bottom is set.
  4. Add the spinach and cook for an additional 1-2 minutes, or until the spinach is wilted.
  5. Fold the omelette over and cook for an additional minute.
  6. Serve immediately.
