Butternut Squash and Black Bean Breakfast Burrito

Ingredients
  • 1 whole wheat tortilla
  • 1 tablespoon olive oil
  • 1/2 cup diced butternut squash
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/2 cup cooked black beans
  • 1 egg
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup salsa
  • Salt and pepper, to taste
Instructions
  1. Heat olive oil in a nonstick skillet over medium heat.
  2. Add butternut squash, bell pepper, and onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in black beans and cook for 1 additional minute.
  4. In a separate bowl, whisk together egg, salt, and pepper.
  5. Heat a small nonstick skillet over medium heat and pour in egg mixture.
  6. Cook egg until cooked through, about 1-2 minutes.
  7. Warm tortilla in the microwave for 10-15 seconds or until softened.
  8. Place butternut squash mixture, scrambled egg, cheese, and salsa in the center of the tortilla.
  9. Fold in the sides of the tortilla and roll it up tightly.
  10. Serve immediately.
