The inspiration for these Avocado and Chickpea Stuffed Pitas came to me one day when I was trying to come up with a quick and easy vegetarian meal. I had some leftover chickpeas in the fridge, and I was looking for a way to use them up. I also had some avocado, red onion, and cilantro on hand, so I decided to combine all of these ingredients into a filling for pitas. The result was so delicious that I knew I had to share it with the world.
Prep time: 15 | Cook time: 12 | Serves: 2
Ingredients
2 whole wheat pitas, cut in half
1/2 cup cooked chickpeas
1/2 avocado, sliced
1/4 cup red onion, thinly sliced
1/4 cup chopped cilantro
1 tablespoon lemon juice
Salt and pepper to taste
Tzatziki sauce, for serving
Instructions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine the chickpeas, avocado, red onion, cilantro, and lemon juice. Season with salt and pepper to taste.
Spread the chickpea mixture evenly over the pita halves.
Bake for 10-12 minutes, or until the pitas are warm and the cheese is melted.
Top with tzatziki sauce and serve.
Why It Works
The combination of chickpeas, avocado, red onion, and cilantro is a flavorful and satisfying one. The chickpeas provide protein and fiber, the avocado adds creaminess and healthy fats, the red onion adds a bit of bite, and the cilantro adds a fresh, herbaceous flavor.
Baking the pitas until they are warm and bubbly helps to melt the cheese and create a gooey, satisfying filling.
The tzatziki sauce adds a creamy, tangy flavor to the pitas and helps to balance out the richness of the filling.
