Heart-Healthy Baked Cod with Roasted Vegetables
This baked cod with roasted vegetables is a healthy and flavorful dish that's easy to make. The cod is cooked to perfection in the oven, and the vegetables are roasted until tender and slightly caramelized. The lemon-herb sauce adds a bright and flavorful touch to the dish.
I've always been a fan of cod, but I've never been a big fan of the way it's usually cooked. Pan-frying it can make it dry and overcooked, and baking it can make it bland and uninspired. I wanted to find a way to cook cod that would be moist and flavorful, without being too complicated. I also wanted to find a way to cook it that would be healthy and low in calories. After some experimentation, I came up with this recipe for baked cod with roasted vegetables. This dish is everything I was looking for: it's moist and flavorful, it's healthy and low in calories, and it's easy to make. I hope you enjoy it as much as I do!
