Tranquil Chia Seed and Mango Pudding
This easy pudding is a perfect summer dessert or snack. It's made with just a few simple ingredients, and it's gluten-free, dairy-free, and vegan. The chia seeds give the pudding a thick, creamy texture, while the mango adds a touch of sweetness and tartness. The pudding is also flavored with vanilla extract and cardamom, and it's garnished with fresh mango slices and coconut flakes.
This recipe was inspired by my love of chia seed pudding and my favorite mango smoothie. I wanted to create a dessert that was both healthy and delicious, and that would be perfect for a hot summer day. I experimented with different ratios of almond milk to coconut milk, and I finally settled on a 1:1 ratio. I also added diced mango, honey, vanilla extract, cardamom, and a pinch of salt. The result is a pudding that is thick, creamy, and flavorful. It's the perfect way to cool down on a hot day, and it's also a great source of fiber, protein, and healthy fats.
