Ingredients
  • 1 pound salmon fillet, skin-on
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced

  • 1 bunch asparagus, trimmed
  • 1 tablespoon balsamic vinegar
Instructions
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a small bowl, whisk together the olive oil, lemon zest and juice, dill, salt, and pepper.
  3. Brush the salmon fillet with the marinade.
  4. Place the salmon fillet on a baking sheet lined with parchment paper.
  5. Roast the salmon for 15-20 minutes, or until cooked through.
  6. While the salmon is roasting, grill the asparagus. Drizzle the asparagus with olive oil and balsamic vinegar, and grill for 5-7 minutes per side, or until tender.
