The idea for this pre-workout snack came to me one day when I was feeling particularly sluggish before a workout. I knew that I needed something to eat that would give me sustained energy without weighing me down. Ingredients
1 cup rolled oats
1/2 cup vanilla protein powder
1/4 cup peanut butter
1/4 cup yogurt
1/4 cup dried cranberries
1/4 cup chopped nuts
1/4 teaspoon cinnamon
1 pinch of salt
1 cup water
Instructions
In a medium bowl, combine the oats, protein powder, peanut butter, yogurt, cranberries, nuts, cinnamon, and salt.
Add the water and stir until well combined.
Cover the bowl and refrigerate for at least 1 hour, or overnight.
When ready to eat, top with additional yogurt, peanut butter, or fruit, if desired.
