Savory Kale and White Bean Stew
This no-nonsense recipe is appropriate for even the most impatient home cook. But don’t make the mistake of assuming that just because it’s easy, it’s not also delicious. This low-maintenance stew is packed with flavor, and doesn’t skimp on any of the savory power you might expect from a long-braised pot of beans. The secret is in the “cheat code” of canned beans, which give you all the flavor and texture of a pot of beans with none of the soaking or advance planning. This is the ideal weeknight meal, and it’s one that you’ll find yourself turning to again and again.
I developed this recipe out of sheer desperation one night when I was famished and had nothing in my fridge but a can of white beans, some kale, and a few basic pantry staples. I threw everything into a pot and hoped for the best, and the result was so unexpectedly delicious that I knew I had to share it with the world. This stew is now a staple in my kitchen, and I make it whenever I’m short on time or inspiration. It’s also a great way to use up leftover kale or other greens.

  5. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the kale is tender.
  6. Stir in the parsley and serve.
Why It Works
  • The canned beans give the stew a rich, savory flavor without any of the soaking or advance planning required for dried beans.
  • The kale adds a pop of color and freshness to the stew, and it also provides a good source of vitamins and minerals.
  • The vegetable broth adds depth and flavor to the stew, and it helps to keep the kale from becoming too bitter.
  • The thyme and parsley add a touch of herbaceousness to the stew, and they help to balance out the flavors of the other ingredients.
