Baked Cod with Lemon and Caper Sauce and Roasted Asparagus
Baked cod with lemon and caper sauce and roasted asparagus is a classic dish that is easy to make and packed with flavor. The cod is baked in a flavorful sauce made with lemon, capers, and parsley, and the asparagus is roasted to perfection. This dish is perfect for a weeknight meal or a special occasion.
This recipe has been passed down through generations in my family. My grandmother used to make it for me when I was a child, and it is one of my favorite dishes. I have made a few changes to the original recipe over the years, but the basic ingredients and flavors remain the same. I hope you enjoy this recipe as much as I do!
Prep time: 15 | Cook time: 30 | Serves: 4
Ingredients
1 pound cod fillets
1 tablespoon olive oil
1 lemon, zested and juiced
1/4 cup capers
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound asparagus, trimmed and cut into 2-inch pieces
1 tablespoon melted butter
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Line a baking sheet with parchment paper.
Place the cod fillets on the prepared baking sheet.
Drizzle with olive oil and season with lemon zest, lemon juice, capers, parsley, salt, and pepper.
Roast the cod for 15-20 minutes, or until flaky and opaque.
While the cod is roasting, toss the asparagus with melted butter, salt, and pepper.
Spread the asparagus on a separate baking sheet and roast for 10-12 minutes, or until tender-crisp.
Serve the cod with the lemon and caper sauce and roasted asparagus.
Why It Works
The combination of lemon, capers, and parsley creates a bright and flavorful sauce that complements the delicate flavor of the cod.
Roasting the asparagus brings out its natural sweetness and gives it a slightly crispy texture.
Baking the cod in the oven ensures that it is cooked evenly and through.
